Amino acids are molecules containing an amine group, a carboxylic acid group and a side chain that varies between different amino acids. These molecules are particularly important in biochemistry, where this term refers to alpha-amino acids with the general formula H 2NCHRCOOH, where R is an organic substituent. [1] In the alpha amino acids, the amino and carboxylate groups are attached to the same carbon atom, which is called the a–carbon. The various alpha amino acids differ in which side chain (R group) is attached to their alpha carbon. These side chains can vary in size from just a hydrogen atom in glycine, to a methyl group in alanine, through to a large heterocyclic group in tryptophan. Amino acids are critical to life, and their most important function is their variety of roles in metabolism. One particularly important function is as the building blocks of proteins, which are linear chains of amino acids. Every protein is chemically defined by this primary structure, its unique sequence of amino acid residues, which in turn define the three-dimensional structure of the protein. Just as the letters of the alphabet can be combined to form an almost endless variety of words, amino acids can be linked together in varying sequences to form a vast variety of proteins.[2] Amino acids are also important in many other biological molecules, such as forming parts of coenzymes, as in S-adenosylmethionine, or as precursors for the biosynthesis of molecules such as heme. Due to this central role in biochemistry, amino acids are very important in nutrition. Amino acids are commonly used in food technology and industry. For example, monosodium glutamate is a common flavor enhancer that gives foods the taste called umami. They are also used in industry. Applications include the production of biodegradable plastics, drugs and chiral catalysts. The first two amino acids were discovered in the early 1800s. In 1806, the French chemists Louis-Nicolas Vauquelin and Pierre Jean Robiquet isolated a compound in asparagus that proved to be asparagine, the first amino acid to be discovered.[3][4] Another amino acid that was discovered in the early 19th century was cystine, in 1810,[5] although its monomer, cysteine, was discovered much later, in 1884.[6][4] Glycine and leucine were also discovered around this time, in 1820.[7] In the structure shown at the top of the page, R represents a side chain specific to each amino acid. The carbon atom next to the carbonyl group is called the a–carbon and amino acids with a side chain bonded to this carbon are referred to as alpha amino acids. These are the most common form found in nature. In the alpha amino acids, the a–carbon is a chiral carbon atom, with the exception of glycine.[8] In amino acids that have a carbon chain attached to the a–carbon (such as lysine, shown to the right) the carbons are labeled in order as a, ß, ?, d, and so on.[9] In some amino acids, the amine group is attached to the ß or ?-carbon, and these are therefore referred to as beta or gamma amino acids.

17. What are Branched Chain Amino Acids (BCAA) and how can they help
October 28, 2009
Branched chain amino acids or BCAA are made up of leucine, iso leucine and valine, three types of amino acids. These amino acid molecules form a branched structure when they come together, which is why they are called branched chain amino acids. BCAAs form over 65 percent of the total 20 amino acids present in the body. This explains the reason for its importance. Another reason why BCAA is important is that they form a part of those amino acids that the body does not synthesize itself; it receives them from the diet. The essential quality of BCAA does not rely only in its proportion of being a... October 26, 2009
Did you know that there are specific foods that may lead to bad breath? This is because of volatile sulfur compounds - the culprit in causing bad breath!
For example, if food sits out too long it will spoil. That spoiling action is due to anaerobic bacteria breaking down proteins in that particular food. In milk, the odor of sour milk is caused by relatives of the bugs that create bad breath when they break down proteins in the milk (and basically in all dairy foods). A reaction takes place where 'the bad breath bugs' extract sulfur compounds from the amino acids in these proteins. Speci... (read more)

21. How Athletes Can Balance Protein and Carbohydrate Needs
October 22, 2009
The ultimate question in any athlete’s mind is how to properly balance his or her intake of nutrients. It’s actually a fairly complex problem, because there are conflicting ideas at work that can confuse even the most dedicated athlete.
For example, you want carbohydrate for energy, but too much carbohydrate can make you lethargic or make you crash. If you focus on a lot of protein, your body won’t have a readily available source of energy because it takes longer to break down protein than carbohydrate.
Athletes need a different type of diet than a weightlifter, because an athlete is... (read more)
