Cooking oil is purified fat of plant origin, which is liquid at room temperature. Some of the many different kinds of edible vegetable oils include olive oil, palm oil, soybean oil, canola oil, pumpkin seed oil, corn oil, sunflower oil, safflower oil, peanut oil, grape seed oil, sesame oil, argan oil and rice bran oil. Many other kinds of vegetable oils are also used for cooking. The generic term "vegetable oil" when used to label a cooking oil product refers to a blend of a variety of oils often based on palm, corn, soybean or sunflower oils. Oil can be flavoured by immersing aromatic food stuffs such as fresh herbs, peppers, garlic and so forth in the oil for a period of time. However, care must be taken when storing flavored oils to prevent the growth of Clostridium botulinum (the bacteria that produces toxins that can lead to botulism).

1. Marinades For Seasoning And Tenderizing Meats
November 18, 2008
A marinade is a combination of oil, acid and seasonings that will tenderize and flavor any cut of meat. The acid, usually wine, vinegar or a citrus juice breaks down the tough fibers in the meat, making it more tender. The oil absorbs flavor from the seasonings, melds them, and carries the flavoring into the meat. It also helps to keep the meat moist and juicy.
A good marinade will help you create that truly special dish, but marinades do not have to be complex. One of my first marinades was a bottle of Italian dressing. (Add one part Worcestershire sauce to 4 parts Italian dressing for a... (read more)

4. Digital Scales: Changing How We Cook

One student, it was a man by the way, talked about how to make cookies. His family owns a bakery and so he was used to making really, really good cookies. He gave several cookies to each member of the class and they were really, really good. I took that recipe home to my wife so that we could make some of them together. This is when I discovered that people who really cook, cook differently than the way tha... (read more)
