A dish in gastronomy is a specific food preparation, a "distinct article or variety of food" [1], ready to eat. A "dish" may be served on dishware, or may be eaten out of hand; but breads are generally not called "dishes". Instructions for preparing a dish are called recipes. Some dishes, e.g. vanilla ice cream with fudge sauce, rarely have their own recipes (and are not found in cookbooks), as they are made by simply combining two preparations. Many dishes have specific names (e.g. Sauerbraten), while others are simply described ("broiled ribsteak"). Many are named for particular places, sometimes because of a specific association with that place (Boston baked beans), sometimes not ("alla fiorentina" ends up meaning essentially "with spinach"). Many are named for particular individuals, perhaps to honor them, perhaps because the dish was first prepared for them, perhaps they themselves invented the dish, perhaps because the dish was invented in their kitchens; because of the high level of culinary mythology, it is often hard to tell the difference among these cases. name="Notes" id="Notes">

10. Oh luscious tomatoes - Raw vegetables are dangerous
August 10, 2008
Raw vegetables are dangerous and must be thoroughly fried, steamed, and boiled into submission. The original sin of a recalcitrant vegetable was of course lessened by heat, but the conscientious nineteenth-century cook continued to boil it long after it had sogged into a jelly-like mass, just in case some evil remained.
In the nineteenth century an hour’s cooking barely sufficed for cabbage and for corn on the cob. They did not fix broccoli at all, and I can understand why. I have tried to imagine broccoli after an hour of cooking, but the mind rares back and refuses even to approach the... (read more)

Garlic, there's nothing like the smell of garlic. It's great in soups and sauces, roasted with meats or on its own, and it's wonderful mixed with butter and slathered on bread and then baked.
The scientific name for garlic is Allium Sativum. It is related to the lily and the onion. Although related to the onion, and having a flavor that very slightly resembles that of an onion, garlic does not bring tears to the eyes when chopped.

Ratatouille is a wonderfully versatile dish that you can easily fix in under 20 minutes if you follow my method.
I was cooking ratatouille long before I moved to the south of France and discovered that it had a name. I always called it vegetarian spaghetti sauce. I'd go to the grocery store and find the freshest, tastiest looking vegetables available. When I got home I'd put two big solid pots on the stove, one filled with hot water for the pasta, and the other to cook the sauce in. I always started with onions, put them in the pot with a generous amount of olive oil (vegetarians get to d... (read more)
