Frying is the cooking of food in oil or fat,a technique that originated in ancient Egypt around 2500BC. [1] Chemically, oils and fats are the same, differing only in melting point, but the distinction is only made when needed. In commerce, many fats are called oils by custom, e.g. palm oil and coconut oil, which are solid at room temperature. Fats can reach much higher temperatures than water at normal atmospheric pressure. Through frying, one can sear or even carbonize the surface of foods while caramelizing sugars. The food is cooked much more quickly and has a characteristic crispness and texture. Depending on the food, the fat will penetrate it to varying degrees, contributing richness, lubricity, and its own flavour. Frying techniques vary in the amount of fat required, the cooking time, the type of cooking vessel required, and the manipulation of the food. Sautéing, stir frying, pan frying, shallow frying, and deep frying are all standard frying techniques. Sautéing and stir-frying involve cooking foods in a thin layer of fat on a hot surface, such as a frying pan, griddle, wok, or sauteuse. Stir frying involves frying quickly at very high temperatures, requiring that the food be stirred continuously to prevent it from adhering to the cooking surface and burning.

4. Crunchy Okra Family Food
July 03, 2008
Okra is a good source of both soluble and insoluble fiber, as well as vitamin B6 and folic acid. Admittedly, frying it is not for the health-conscious, but at least the good stuff is still there. So, okra is grown mainly in very warm climates and was probably brought to America from Africa three hundred years ago. It looks like a small, ridged pepper, but has a soft, almost fuzzy exterior rather than smooth like a pepper. The flavor is very mild.
The thing about okra that usually turns people off is that when you slice it, the insides release this slippery, slimey substance. This actua... (read more)

6. Very Tasty Fried Vegetable
June 07, 2008
Heat up a little canola oil, or whatever you like to stir-fry with, in a deep pan or wok. Put the harder vegetables in first, and cook them hot, stir-frying them to keep them from getting burned. When those are starting to soften, turn down the heat a touch and add the "softer" vegetables, like squash and mushrooms. Add a little more oil if you must, and stir-fry everything until the new vegetables start to get tender. When they're done, so are you.
The vegetables I like to use in this recipe is pretty similar to the stuff I like to steam. Yellow & zucchini squash, zucchini peel (not kidd... (read more)

25. Steamed Shrimp
March 24, 2008
Steamed Shrimp is a very simple noodle dish of pork and shrimp, 'Woon Sen' is glass noodle, 'gung' means shrimp, but the important word here is 'op'. We call it 'op', because you layer the ingredients in the frying pan, add a little water and cover the noodles with a lid, the water sort of part-steams, part-fries the noodles. 'Op' refers to this cooking method and there isn't a simple word in English that corresponds to it. A couple of things to note: 1. Use pork with some fat in it for this dish, it will give the dish a lot of extra flavour. 2. Maggi sauce is a savory flavouring sauce that i... (read more)
