A noodle is food made from unleavened dough that is cooked in a boiling liquid. Depending upon the type, noodles may be dried or refrigerated before cooking. The word noodle derives from the German Nudel (noodle) and may be related to the Latin word nodus (knot). In English, noodle is a generic term for unleavened dough made from many different types of ingredients. Noodles exist in an abundance of shapes. The first written account of noodles is from the East Han Dynasty between AD 25 and 220. In October 2005, the oldest noodles yet discovered were found at the Lajia site (Qijia culture) along the Yellow River in Qinghai, China. The 4,000-year-old noodles appear to have been made from foxtail millet and broomcorn millet.[1] name="Other_Links" id="Other_Links">

1. How to Help a Friend that Might be a Victim of Domestic Abuse
November 18, 2008
Years and years ago I lived in the downstairs apartment of a row house. Our upstairs neighbors were the only people I knew in the neighborhood. Although I wouldn't say we were best friends, I did interact with them quite a bit socially. I really liked both of them. He was this good old boy from the area who's mother kept all of us in lasagna and tuna noodle casserole. She was this vibrant, passionate, singer in a rock band, who was unbelievably beautiful, even when she had black eyes. I would hear them fighting at night. I knew he was hitting her. I never brought it up and neither did ... (read more)

4. Noodle shop owner finding way in Beijing
August 15, 2008
Last Thursday, after slurping apple sauce noodles at Beijing's trendy Noodle Loft, one of the owners, American Johnny Hsu, whose wife and child still live in San Francisco, gave me a tour of his two-story establishment on the edge of the city's Central Business District. "We have eight kinds of noodles," boasted Hsu as one of his chefs sliced noodles with a chopstick. "We even have green spinach noodles that are 25 feet long." Foreign media personalities, including chef and television host Anthony Bourdain, have profiled the restaurant. The chefs at the Beijing Ritz-Carlton are also showing ... (read more)

8. Learn Jazz Faster by Bringing Purpose to the Practice Room
May 12, 2008
When many young (and not-so-young) musicians first gain some facility on their instruments, they often want to play all the time. The sheer joy of making their own music and sounding good on their ax is irresistible. They noodle constantly—before the song, during the song, after the song, when someone else is talking, when no one is talking, even when they’re talking themselves. Maybe you play with one or two musicians like this in your own bands, or perhaps you have them as students. While their enthusiasm and energy are certainly great assets—and you’d never want to put a damper on them—this... (read more)

10. Rice Noodles in a Spicy Broth
April 30, 2008
This noodle dish, literally translated as "Noodles from Siam" actually has its roots in nearby Malaysia, where it is usually eaten for breakfast (which explains the addition of boiled eggs). However, I find it also makes a great dinner dish. Vermicelli noodles are surrounded by a rich shrimp-based broth that is deliciously unique in taste. To serve it the authentic way, scoop noodles into bowls along with the sauce, then place all other toppings on the table and let your guests put the final dressings on this fun and flavorful dish. But be forewarned: these noodles can become addictive!

12. Steamed Shrimp
March 24, 2008
Steamed Shrimp is a very simple noodle dish of pork and shrimp, 'Woon Sen' is glass noodle, 'gung' means shrimp, but the important word here is 'op'. We call it 'op', because you layer the ingredients in the frying pan, add a little water and cover the noodles with a lid, the water sort of part-steams, part-fries the noodles. 'Op' refers to this cooking method and there isn't a simple word in English that corresponds to it. A couple of things to note: 1. Use pork with some fat in it for this dish, it will give the dish a lot of extra flavour. 2. Maggi sauce is a savory flavouring sauce that i... (read more)

16. You've Gotta Be Nuts To Noodle For Catfish!
October 16, 2007
The first time I experienced the fear and excitement of watching someone noodle for catfish, it scared the heck out of me. Noodling, or grabblin as it's called in some circles, is fishing for large catfish with nothing but your hands and maybe a pint of Jack Daniels. It's a dangerous sport! That day I was fishing on the Tennessee River for anything that would bite. About a hundred yards downstream from where I sat, there were two men looking up and down the bank searching for something. As I watched, one of them waded into the water with his clothes on, and began slowly walking down t... (read more)

20. Visitors guide to Thai cuisine
July 20, 2007
Tourists, not knowing where to start, will often look for the first menu that they find in English and sometimes this can have its drawbacks. Restaurants catering for tourists often think that farang will not be able to handle the real taste of Thai cuisine and so disguise the flavours that are synonymous with the regional specialities with ingredients they think we will like. For this reason, it is a good idea to befriend a willing local to advise you on what’s hot and what’s not.
Having said this, visitors often proclaim that the food is the highlight of their Thailand trip and with it... (read more)

21. How To Be A Good Guitarist
June 10, 2007
I was reading my guitar magazine. This person writing in had listened to this young band. He explained how the guitar player just couldn’t cut it. He had nasty tone, was restricted to the most basic pentatonic shapes, had bad string bending. He was not a skilled guitarist. But this guy loved him! He said it ‘spoke to him’ and the music ‘transcended the abilities involved.’ Some guitarists, while sometimes not particularly masterful players, still have the power to captivate audiences. My best bet is that the guitarist that guy listened to was one of those. Guitarists like these normally lear... (read more)

22. Macaroni and Cheese - From Basic to Bold
June 03, 2007
My child's favorite meal is macaroni and cheese. The cheesier it is the better. I like it myself, but the cheesier it is, the more fattening it becomes, too. Here are some ideas to make that family classic a little more nutritious for the kids.
Mix up the cheese. Macaroni and cheese is nothing unless it is dripping cheese from both ends of the noodle. But, the cheese your mother chose doesn’t have to be the same cheese that you use. Opt for Velveeta® Light cheese spread. The light version has a third of the fat and melts even better than regular cheese. This cheese works well if you cook ... (read more)
