A noodle is food made from unleavened dough that is cooked in a boiling liquid. Depending upon the type, noodles may be dried or refrigerated before cooking. The word noodle derives from the German Nudel (noodle) [1] and may be related to the Latin word nodus (knot) [citation needed]. In American English, noodle is a generic term for unleavened dough made from many different types of ingredients. Noodles exist in an abundance of shapes. In 2005, the oldest noodles yet discovered were found at Qinghai. The 4,000-year-old noodles appear to have been made from millet.[2][3] Contrary to widespread belief, pasta types such as penne, rigatoni, farfalle and others are not classified as noodles. While they are produced with some of the same wheat based ingredients, their form and structure do not adhere with that of the noodle family of food products.[citation needed] An example is the Thai glass noodle salad

Start with any pasta. I prefer whole wheat in a curly cue shape, but you can make this dish with pretty much any pasta noodles you like.
