History of pizza
Pizza deliveryOriginating in Neapolitan cuisine, the dish has become popular in many different parts of the world. A shop or restaurant that primarily makes and sells pizzas is called a "pizzeria". The phrases "pizza parlor", "pizza place" and "pizza shop" are used in the United States. The term pizza pie is dialectal, and pie is used for simplicity in some contexts, such as among pizzeria staff. The Ancient Greeks covered their bread with oils, herbs, and cheese. The Romans developed placenta, a sheet of flour topped with cheese and honey and flavored with bay leaves. Modern pizza originated in Italy as the Neapolitan pie with tomato. In 1889 cheese was added.[1] King Ferdinand I (1751–1825) is said to have disguised himself as a commoner and, in clandestine fashion, visited a poor neighborhood in Naples. One story has it that he wanted to sink his teeth into a food that the queen had banned from the royal court—pizza.[2]

1. Dispute ends in deal, not in strike
November 19, 2009
It was a high-stakes game of chicken that went down to the wire.
Both sides had prepared for a strike that could have cost billions of dollars in lost sales and wages.
But as the 6 p.m. strike deadline approached Friday, the parties moved toward one another instead of away. And employees at Arizona Fry's and Safeway supermarkets picked up pizza slices in celebration instead of picket signs.
It was a happier result than five years ago in Southern California, when a bruising strike went on for 20 weeks before the United Food and Commercial Workers Union gave in to many of the c... (read more)

2. Raise Dough With a Pizza Fundraiser
November 19, 2009
One of the most common fundraisers is a bake sale. Every school, church, or other charity organization has probably hosted one at least once. They're desirable because they're easy to organize, easy to execute, and have great potential for money making. Who doesn't love baked goods, right? But there's a downside. Because they're so popular and done so often, they can get old and over time, not as successful as they might have been when they were a new fundraising method for your group. Sometimes, it helps to branch out. Another fundraiser to try, that can be just as successful as a bake sale i... (read more)

3. Merits and values of Mediterranean cuisine
November 16, 2009
As the old saying goes, we Italian people live to eat and sometimes, seeing certain people at the restaurant, this definition does not even seem too exaggerated. Yet the Mediterranean cuisine is considered among the most healthy and balanced in the world.
This diet had been abandoned during the economic boom of the sixties and seventies as too poor and not very attractive compared to other modes, in particular with the rich food from America, but now the Mediterranean diet is surely regaining, between nutritional patterns, the consumers’ interest. If pizza is the most famous Italian food... (read more)

Inspecting Mixers
After the oven, the mixer is probably the next most important piece of pizza equipment in a pizzeria. 15. Buying an Existing Pizzeria Part 1
November 05, 2009
What Equipment to Inspect
Since pizza equipment and supplies are paramount to successful day-to-day operations, it should be inspected and checked before purchasing. It should be noted that when you take new ownership of a restaurant, you are subject to current regulations. This means that if a piece of equipment or HVAC was “grandfathered” as allowable for the previous owner, it will not be for you. You need to try to have the local inspectors come in and give you reports of the inspections. This costs money up front but it is much better to know before hand then after you have ma... (read more)
