Summer is almost on us, and we’re all looking forward to seasonal cookouts and barbecues – if the weather holds! But what to put on the grill? Here are some of our top ideas: Steak Steak is a classic for a reason. Of all the ways to cook it grilling is arguably the best, giving a leaner and plumper finished product that any other method. The downside? It’s expensive and if you have a lot of people coming over, you might find yourself asking them to chip in! Additionally it requires attention and people tend to have different preferences when it comes to steak. Unless it’s a small family-only get-together, steak can be more trouble than it’s worth. Burgers Again, a classic for a reason. Burgers are relatively cheap, easy to get in plentiful quantities and almost everyone likes them. Cook off some onions and buy in some buns and a jar of relish and you’re away. It’s only likely to be a problem for vegetarians. Sausages Sausages can burst if they’re not pierced before cooking but otherwise they’re pretty much a perfect barbecue food. They’re cheap, easy to cook and smell good enough that you’ll soon have a crown around your grill! Vegetarian Alternatives One option is to cook vegetarian sausages, burgers and so forth. If you’ve never done this before, keep your eye on them. They tend to burn more easily and require extra fat, so get a bottle of vegetable oil. Many will fall apart and must be fried on the grill, in the same pan as the onions for instance. Another option is to cook vegetables. Peppers and mushrooms grill well, as do eggplants. Lamb Lamb grills extremely well. It’s a fatty and succulent meat and it picks up flavors very well; try marinating some in Indian spices for something a little different. Plain grilled lamb, either in steaks or on a skewer, tastes great as the sweetness of the meat contrasts with the smokiness it imbibes on the grill. Fish Fish might not be the first barbecue food to spring to mind. But swordfish, tuna, salmon and trout all offer fillets and steaks that make great barbecue fodder. It takes a little less time to cook than beef and it’s a fresher, lighter taste, but it can be a real addition to your barbecue repertoire. Pork Pork is a great barbecue meat. It takes a smoky flavor well – think bacon or gammon – and it’s fairly easy to cook, and comes in a wide variety of cuts.
