Day 8 in the 30 day blog challenge is a day off and a day of cooking Krissy’s Grandma’s Famous Meat Loaf. She hates to even call it meat loaf its more of a gourmet melt in your mouth version of a fabulous steak. She grinds her own hamburger from what cuts of steak are on sale but never filet that would be broader line against the law in Churchville. A simple filet wrapped in bacon severed with a baked potato is and all the fixings is Kirssy’s favorite meal of all times. The meat loaf Krissy is making today she plan on submitting to the church cook book along with serving at the restaurant she hopes to open in the diner that closed a few years back in town. Old Fashioned Meatloaf 2 tabl Butter 1 med onion, chopped 2# rib eye or sirloin steak if hand grinding or gound beef, best 80-85% lean 2 eggs, slightly beaten 1- 8 oz can tomato sauce Krissy uses canned tomatoes and de-seeds and juices them ¼ cup whole milk or 1/2 and 1/2 ¾ cup quick oatmeal 2 tbls chopped fresh chopped parsley ½ tsp leaf sage, basil or oregano 1 tsp salt 1/2 tsp black pepper catsup, optional Saute butter and onions until soften In a bowl combine tomato sauce, eggs and milk, oatmeal, onion mixture, salt pepper, beef, parsley, herb of choice until combined. Lightly spoon into a 8x4x2” loaf pan. If desired pour catsup down the center of the loaf. Bake @ 350º oven for 1 to 1 ¼ hours or until internal temperature measures 160ºF. . Spoon off fat. Let stand for 10 minutes before serving. Shepherds Pie variation: Make Meat loaf as above but use a glass or pottery pie plate, bake. Boil potatoes and prepare as mashed potatoes. Pile on top of baked meatloaf, sprinkle with cheddar cheese. Return to the oven to melt cheese. Serve as a pie slice.
