Growing your own treasured spice could not be easier. Saffron does need a bit of winter chill and is very hardy in zones 5-8 (just make sure they are planted before winter sets in).
What makes the spice so very expensive is that the blooms are just 2-4 inches tall and must still be harvested by hand. Furthermore, each bloom yields just 3 strands of saffron. It takes 4,000 strand to make 1 ounce of saffron! The good news is you only need 6-8 for a paella or other saffron dish.
As a bonus, the saffron flower is also strikingly beautiful. It's alluring lavender blossoms are a perfect juxtaposition to it's delicious bright orange strands (the expensive edible part)!
