IL Civettaio is an organic winery in the Maremma area of Tuscany. It produces great wines including a 100% sangiovese montecucco red and a Rosato made principally from sangiovese. As an organic winemaker Gregorio relies on nature to do most of the work. He is fortunate to have a great region to grow his grapes. Piero Antinori believes the Montecucco area is most conducive to the quality growth of sangiovese in Italy. As a result Gregorio’s wines age beautifully with elegance and balance. One aspect that is worth mentioning here, as an organic winemaker, the level of sulphites in Gregorio’s wines are very low (so no headaches). Sulphites, which in most red wines are around 100mg plus per litre, run at only 35mg per litre in Gregorio’s montecucco sangiovese 2007.
