Historically, it dates from a time in which the land was primarily used for rearing goats and the centuries since have really helped perfect it. Comté Perhaps one of the most famous from the region, Comté is a hard variety that will never give you exactly the same experience twice. It matures for 120 days and in this time you can expect a number of flavour profiles to develop – from milky to spicy, it’s got the potential to really blow you away. It comes in a large wheel and a number of different stamps, depending on when and where it was made. Trying a bit of each and selecting a favourite to bring home is a must!
