Grit is how rough the stones are. Lower grit numbers refer to coarser stones, while higher grit refers to stones that are smooth. A coarse grit should be used initially to remove nicks or chips from edges. Fine grits are used to polish and hone the final edge. A combination stone with coarse and fine grits can be purchased to fulfill both needs. Fourthly, determine the correct size of the sharpening stone. A larger tool needs more surface space to be sharpened properly; small tools need only a small sharpening area. Choose stones based on your tool sizes so the water or oil stones will wear evenly -- this keeps your tools' edges clean and working at a high quality. Diamond stones do not wear down. Fifthly, select a stone, or a set of stones, based on the type of use. Tools that must be sharpened infrequently may only require a single or combination water stone. More regular sharpening may be easier on an oil stone. For professionals or those who need to sharpen tools frequently, investing in a diamond stone along with several specific-grit oil and water stones may be the best long-term investment.
