South Indian Style Masala Dosa Masala Dosa is an absolute delicacy not only in the south indian home, but in the homes of people around the world who love Indian food. The rice and lentil crepes are filled with a delicious potato filling that is tempered with mustard, green chillies and onions. Every home in southern India has their variation in making the filling. And this recipe is the way my mother makes it. Main Ingredient Dosa Batter oil or ghee for making dosa non stick or iron skillet for making dosa Ingredient for Masala 2 cups of boiled potatoes, cubed 2 green chillies, finely chopped 1 teaspoon ginger, grated 1 cup onions, finely chopped 1/2 cup tomatoes, diced 1/4 cup peas, steamed 1/2 teaspoon turmeric powder 1 teaspoon mustard seeds 1 teaspoon broken half white urad dal 3-4 curry leaves Chopped coriander leaves salt to taste 1 tablespoon oil Method for Making the Masala Filling Heat oil in the heavy bottom pan on medium heat; add the mustard seeds, urad dal and allow it to crackle. Stir in the onions, green chillies, ginger, curry leaves and saute until the onions become soft with a pinkish color. Stir in the turmeric powder, potatoes, tomatoes and salt. Simmer for 10 minutes stirring occastionaly. Finally stir in the steamed peas and chopped coriander leaves and the filling mixture is ready. Method for Making Dosa For making dosa's; heat the skillet on medium heat. Pour a ladleful of batter over the skillet and spread the batter evenly using a spiral motion from inside out. Pour a teaspoon of oil or ghee around the edges and. Increase the heat and cook for couple of minutes until the bottom of the dosa starts to turn golden brown. Turn over carefully and cook the other side for a few seconds. Add filling inside on one half of the dosa and fold into half or make a roll. Add the chopped green chillies and coriander leaves to the dosa batter. Churn it to mix well. 2. Heat a spoon of oil on a flat pan. Add a handful of chopped onions to the pan and saute for 2 minutes. 3. Then add bell peppers and saute for another 2 minutes. 4. Finally add some chopped tomatoes and 1/2tsp soy sauce to the pan. 5. Pour the dosa batter over the pan and spread it out evenly. Sprinkle some more oil so that the dosa becomes crisp. 6. Fry the dosa for a minute or two and lift it out of the pan.
