Enjoying The Authentic Texas Tamales Many people haven't tried the authentic Texas Tamales. They most tried and tested tamales from fast food Mexican chains or from the frozen section of the grocery stores. However, what they did not know is that it is actually quite easy to make your own tamales. There are basically two kinds of tamales—sweet and savory (kind of like crepes too). You can serve tamales as appetizers, a main dish or as snacks, but you can also serve them for desserts especially if you use fruits and other sweetener as fillings. Making the real Texas tamales There are many versions of the Texas Tamales, but this is probably the only recipe that will be this easy and simple. If you want to make tamales from scratch, you have to devote a little time into making the masa or corn dough for the wrapping. Once you have gotten over the fact that you have to spend quite a little bit of time in making the dough, then you are ready to create your very first tamale. For the tamale dough, you will need the masa, beef broth, baking powder, salt, lard, dried corn husks and sour cream. For the filling, you will need ground pork, onions, garlic, chile pods, water and salt. The first thing you need to do is boil and cook the pork with the garlic and onion by sautéing it. After sautéing the meat, combine the chiles with the water (but first remove the stems and seeds from the chiles). Mix the chiles and the water by using a blender until smooth. After blending them together, put salt and mix them with the sautéed meat. To form the dough, you will need to boil the corn husk. In a separate bowl,mix the lard until smooth with the beef broth. Add the masa, baking powder and salt. Add the lard mixture and add more broth until it forms a spongy dough. Finally, spread the dough on the corn husk. Make sure to spread it evenly. Place a tablespoon of the filling in the middle of the dough spread. Fold the husks toward the center and place them in a steamer. Let it cook for one hour. Once the Texas Tamales are done steaming, serve them while they are hot. Open the husks carefully and drizzle the chile sauce over the tamale. If you want something sour, top it with sour cream or mix the sour cream into the chile sauce. You can also serve it with other dips that you can buy from the grocery stores. However, it is always best if you can serve homemade fresh tamales with sauces and dips made from scratch as well.
