For this recipe, you will need some olive oil for frying, plus a medium sized onion, along with two finely chopped cloves of garlic, two cups of tomato ketchup or homemade tomato sauce, half a cup of unsulfured molasses, a quarter cup each of cider and Dijon mustard, a tablespoon of fresh lemon juice and a teaspoon of paprika and some salt and pepper for seasoning. Firstly, heat the oil in a medium sized pan, gently raising the heat to a medium level. Add the crushed cloves of garlic to the hot oil and allow to cook gently until it has coloured slightly. Then add the chopped onion, cooking it with the garlic in the pan for around six minutes, or until the onion has coloured slightly and has a transparent quality to it. Add the tomato sauce, molasses, cider and mustard to the pan, stirring them together. This mixture should then be allowed to cook on a low to medium heat for around 20 to 25 minutes, until it has reduced and thickened nicely. Stir it as it cooks to prevent it sticking to the bottom of the pan, and taste frequently to ensure adequate seasoning is added. The finished sauce is delicious eaten hot or cold, and provides a much tastier and more wholesome option than many of the cloying manufactured sauces which are available on the market. The recipe can also be adjusted to suit your preferences, with some crushed chilli flakes perhaps adding a touch of additional spiciness for some. Drizzling in extra virgin olive oil when the sauce is cold also adds an extra flavour. This sauce is obviously a very tasty accompaniment to meat dishes, and will work well with any kind of red or white meat that you cook on the barbecue. Its use is not limited to meat dishes though, and it also works well with grilled vegetables or similar. Its traditional flavours also work well as a dip for chips or French fries. A good idea when it comes to making this kind of sauce is to make a large quantity and then put what you do not immediately use into tubs for the freezer. This way, you always have some of it in readiness, no matter how many times events may surprise you. Make a really big amount and you could have people coming round simply to taste it, and to see it they can copy it.
