Slow cookers with presets and smart programming make cooking easy and enjoyable. To delight family and friends, you can add a whole new taste to slow cooking with a dash of Moroccan spices. All you need are the usual ingredients and a Moroccan touch can be easily added. Chickpea soup flavored with Moroccan spices makes an excellent choice for the first course. Heat olive oil in a slow cooker insert and saute onion and garlic till the onions turn translucent. Add cinnamon, cumin, pepper, paprika and Ras el Hanout to the pot and saute for a minute. If you can't find these flavorings, many gourmet food stores offer Moroccan spice blends and condiments for ease in cooking. Next, add chopped tomatoes, canned chickpeas, broth and sugar to the mixture and season with salt and pepper. Add some water and let the soup simmer for 45 minutes. The advantage of using slow cookers is the minimal supervision involved in cooking. The cooker will automatically turn to keep-warm mode after 45 minutes. Finally, blend the soup into a creamy consistency and serve hot with pita chips. Besides soups and stews, Moroccan spices beautifully complement meat and poultry dishes. Chicken with almonds and apricots with Moroccan spices is a flavorful recipe. Saute onion and garlic in a skillet for a minute. Mix a tablespoon of flour and some Moroccan spice blend with the onions. Whisk lemon juice, broth and honey in the skillet to make a sauce. Stir in dried apricot in the mixture and keep the sauce aside. Next, season the chicken with salt and pepper. Slow cookers are an excellent choice for cooking the chicken to tender perfection. Pour the sauce into the slow cooker and cook the chicken in it for three hours. Serve it with cilantro and toasted almonds. Slow cookers are also excellent tools for making desserts; Moroccan-spiced orange cake is a wonderful dessert that can be served with Greek yogurt or whipped cream. Line the base of the cooker with greaseproof paper and make a mix with breadcrumbs, ground almonds, sugar and baking powder. Whisk oil with eggs and add the dry mixture into this and stir well. Pour this batter into the cooker and bake for an hour or more till the cake is firm. While the cake is baking, make some citrus syrup with orange and lemon juice along with sugar, cloves and cinnamon. After the cake is done, pierce it several times with a skewer and pour the syrup all over the cake. Allow the syrup to soak and serve with whipped cream.
