Preparation time: 30-35 minutes Serves: 8-10 Ingredients: All-purpose flour – 250 g Baking powder – 1 tablespoon 1/3 teaspoon salt 1/3 teaspoon cream of tartar 4 large eggs 1½ servings of cooked mashed sweet potatoes 1 serving of milk 1/4 serving sugar (preferably brown) ¼ serving of melted butter 2½ tablespoons orange zest Ingredients for the orange butter sauce: 1/3 serving of orange juice 1½ teaspoon lemon zest ½ serving of sugar A stick of butter Preparation of the waffles Begin by mixing all the dry ingredients in a mixing bowl. These include: baking powder, flour, salt, and cream of tartar. Combine egg yolks, milk, melted butter, brown sugar, mashed sweet potatoes and orange zest in another mixing bowl. After ensuring that the ingredients in each mixing bowl are mixed well, combine them in one big bowl. Beat the egg whites separately and stir well till stiff peaks form. Once that is set, fold it in the mixture in the big bowl where a thick batter would form. Pour a little oil on your waffle pan then heat it. Spread the mixture on the heated pan and leave it to cook. In a period of 30 minutes it will turn golden brown in color. Preparation of the orange butter sauce for the waffles: Place the butter into a sauce pan and leave it to melt. Add the ingredients for the sauce that I mentioned earlier. Let it cook for some time till the sauce reduces by half while it starts to thicken. To speed up the thickening you can add cornstarch as soon as the sauce starts bubbling. Turn off the heat and let it cool to room temperature.
