Centennial College's School of Hospitality, Tourism and Culture is geared towards preparing students for the entire range of careers in the field. With 19.6 million visitors making overnight trips to Canada (and almost four million visiting Toronto), The School of Hospitality, Tourism and Culture recognizes that some students may want to enter their desired industry (accommodation, food and beverage, transportation, travel services, or recreation and entertainment) in less time. As such, it offers certificate programs that while spanning a shorter amount of time result in a respected Ontario College Certificate. One such offering is the hospitality program known as Hospitality Operations - Kitchen Management. Students are readied for the food and beverage services sector (which is anticipated to grow in employment to 1.95-million people by 2015), in just two short semesters that are packed with a range of courses and a wide variety of knowledge. At Centennial College, the teaching method always involves a hands-on approach and this offering is no different. It makes use of Progress Campus, which houses all of the programs in this School of study and includes facilities that reflect the latest innovations in the field. For example, at the Culinary Arts Centre, students get to experience tools such as tandoori ovens, brick pizza ovens, and all of the other aspects of a kitchen that will allow them to complete the tasks required of them as kitchen managers. Meanwhile, the living lab Horizons Restaurant is students' opportunity to experience dealing with real life customers and dilemmas that they will likely encounter once they graduate. Specific topics covered in the Kitchen Management courses, meanwhile, include practical math for hospitality, theory of food, quantity food production, human resources and career planning, principles of food, beverage and labour cost controls; supervisory practices for the kitchen manager, purchasing for the commercial kitchen and more. A highlight of the program is that the knowledge students gain in each hospitality course at Centennial College is reinforced by the opportunity for students to apply it to the field prior to graduation through a placement within a food service enterprise. Focused on the kitchen manager role, this experience also allows students to work alongside professionals with whom they may develop working relationships. A field experience such as this one certainly enhances students' resumes, especially when you consider that among Centennial College's industry partner are reputable companies such as Moxie's Grill & Bar, Swiss Chalet, Milestones, Red Lobster, The Keg, Canyon Creek and may local Toronto establishments such as Shoeless Joe's, Tucker's Market Place, Duke Pubs and Milagro Cantina Mexicana. Many of these educational partners hire students once they complete their placements. Those students, however, who wish to pursue further education have the opportunity to do so by transferring into the second year of Centennial College's two-year Restaurant and Catering program.
