The defensive ramparts and the 52 watchtowers are only part of the defensive make-up of the city, which is a great place to discover on foot. Other highlights include visits to the historical site of the Cathar village of Minerve and the Cathar town of Mirepoix. Guests will be treated to tours of the gorgeous city of Narbonne and of the old Cathar town of Castelnaudary, which was the birthplace of the famous French gastronomic delight known as cassoulet.
