Not Your Mama’s Meatloaf
Try this slice of comfort food with a red wine glaze instead of the traditional ketchup or barbecue. Make your meatloaf with your favorite ingredients. Some people use lean ground beef while others like to add lamb, pork, or veal. Add spices like parsley, sage, nutmeg and cayenne for a subtle undertone. The red wine glaze is made by combining red wine, sugar, molasses, and allspice in a saucepan over medium heat. Bring it to a boil until the glaze has thickened then brush it over the meatloaf 20 minutes before it is done cooking. Pair with steamed carrots and a helping of garlic mashed potatoes.
Leek and Red Wine Soup
Combine saffron, leeks, and extra virgin olive oil in a saucepan over medium heat. When the leeks are tender, add red wine, chicken stock, and crumbled toast and allow the mixture to simmer. Puree the soup in your processor or with an immersion blender. In another skillet cook more leeks until tender and add them to the finished soup puree with freshly grated Parmigiano and croutons.
Salmon with Red-Wine Balsamic Sauce
Made famous by New York’s Gotham Bar and Grill, this dish is best served with baby turnips or fennel. In a saucepan, add olive oil and shallots and cook over medium heat until tender. Add black pepper, thyme, Pinot Noir, and balsamic vinegar and bring to a boil to reduce. Remove from heat and whisk in heavy cream and butter. Strain the shallots then drizzle it over cooked salmon.
