Pairing wine and cheese is almost an art form. Depending on preference, some party planners like to select their cheese before shopping for a complimentary wine. There are four major categories of cheese: bloomy, hard, blue, and fresh.
For bloomy cheeses like brie, camembert, and taleggio, opt for champagne, pinot blanc, or chardonnay.
Hard cheeses include several popular varieties like gouda, cheddar, gruyere, and pecorino. Pair these with merlot, cabernet sauvignon, sauvignon blanc, and Valpolicella respectively.
Blue cheese, gorgonzola, and stilton are usually salty and should be paired with sweet wines like riesling, eiswein, and sauternes.
Fresh cheeses include favorites like mozzarella, ricotta, and feta. These go well with pinot grigio, Chenin blanc, and tocai friulano.
For a party of 8, you’ll want at least 2 lbs. of cheese, a half-pound of each variety. Look for organic cheeses that are produced locally or consider imported varieties from France, Italy, or Spain. Special orders will take longer to receive so consider this when you are in the planning stages. Order your wine selection at least two weeks in advance. On the day of the party, allow your cheese to come to room temperature by removing it from the fridge at least two hours before your party starts. If you are serving red wine at your event, consider decanting these before your guests arrive.
