So I thought to help you with few famous dishes in Kenya. They contain various spices, most of them say spices are not good for health but it is not, they are in actual Herbs and Spices. Herbs and spices are your friends; they complement your cooking and baking. They make food taste better and enhance the flavor of the dish you’re making. I hope you will all experiment with more herbs and spices. The traditional food of Kenya has evolved to incorporate a little bit of the exotic – spicy aromas and the delights of coconut milk blend with introduced foods from faraway lands. The history of Kenya and its cuisine are now forever linked. Simple and wholesome would best describe many traditional dishes which form the foundation for the cuisine of Kenya. In rural areas local ingredients are put to good use to create honest and nutritious meals that are also filling. The nearer you get to the coast the more exotic the cuisine becomes due to the influence of merchant traders and colonization by foreign countries over many centuries. Aromatic spices from the East such as cinnamon and cloves found their way into Swahili culture alongside foods like corn, cassava, cocoyam, pumpkin, tomatoes bananas and pineapples. Kuka Paka- Kuka Paka is a Swahili recipe which showcases the rich culture and is a perfect illustration of how African, Arab and Indian influences bond in the coastal region. It is a delicious coconut curry from east African coast. Exciting craze about the dish is that it has a little inclination towards India as it combines the wonderful taste of coconut and Indian spices. Kunde- Kunde is a staple dish of Kenya that is to be served over rice. It is another popular vegetarian dish after sukuma wiki that is eaten by Kenyans. The aroma comes from the kitchen as its cooking is amazing, so it’s well worth the little bit of effort and the taste will be even better. It has different ways of cooking as in leaves can be boiled first or it can be boiled afterwards after adding all the ingredients that it requires. Sukama Wiki- Sukuma Wiki is an ever present Kenyan dish that is nutritious and tasty. They are popularly known as Kenyan sauce. It is a simple way of stretching the kitchen resources as vegetables are cheap and plentiful. It is a very low fat, high protein, high vitamin and iron meal. It is a Kenyan dish of braised collard greens, usually prepared with ground meat, tomatoes and onions. Ugali- Ugali is a staple starch component of many African meals, especially in southern and east Africa. This dish goes by different names in sub Saharan Africa. It is a stiff porridge made from white cornmeal or red millet. It is practically a national dish served with meat or mashed vegetables. Githeri- Apart from ugali, githeri is another staple food in Kenya. Githeri is a mixture of boiled maize and beans that can be made as a light meal or main dish. It is a popular meal among the Kamba and Kikuyu tribes. It is your choice as to what to do with the combinations after it’s cooked. Irio It is a hearty and nutritious accompaniment to meals that has become popular throughout great Kenya safari. It is a dish that consists mainly of mashed potatoes, peas and green vegetables like spinach and pumpkin leaves. It is usually paired with grilled steak in combination. Irio is similar to Southern Africa’s Moroko.
