Taste of the curry in an Indian trip is possibly not easy to forget. Travelling to any corner of the country, one cannot escape the influence of food in the society. Curry is closely associated with Indian cuisine, but there is a lot of extravagance involved beyond the world of curries. It would be entirely true if someone says that the Indian recipes are quite confusing. This can be said to be the complement for Indian cuisine as well as an expression of the vastness which someone would experience. From the visuals of a dish being prepared on the traditional wood furnace under a mud constructed crevice to the modern day microwave cooking, everything is possible to be seen. Along with the variety of cooking, there is a change in the number of recipes that are prepared.

• Spices have been an integral part of the food preparation in India. In every kind of Indian dish, there is surely an addition of some condiment. It might vary in the north and south, but without putting in something extra, the preparation doesn’t end. In foreign lands, there are also additions, but the spices from India have their trademark taste, which is not found with any other kind of cooking. Many of the microwave recipes are also possible with these additions.

• East and west variations in the taste and method of cooking are also many. Regional variations are so many that it is not possible to follow the food profiles in each community. Broadly though, cuisine can be described as being from the north or from the south. Even eastern parts like Assam, Meghalaya and West Bengal have different items than the western states of Gujarat, Uttar Pradesh and Maharashtra. Southern states have different items than those in the northern states like Kashmir and Punjab.

• One of the best things about Indian cuisine is the adaptability to various kinds of recipes. As the Indian microwave cooking has seamlessly adjusted to the Indian kitchens, so have the influence of different cultures brought new recipes to the table. Many cultures, religions and kingdoms have come and gone from the Indian subcontinent, but each of these has left behind a legacy in form of recipes. Starting from the Portuguese people to the pre-independence Britishers, Indian cooking has remnants from every culture. If thick gravy and almonds in dishes is ingrained from Mughal era, then the Vindaloo and Xacuti are borrowed from Portuguese dishes.

• Eating meat is one of the important aspects of Indian cooking. Many parts of India do not have the concept of non-vegetarian food, but wherever such recipes are prepared, they are considered to be unique. Nowadays, many Indian microwave recipes have titillating non-vegetarian items being prepared at homes. Restaurants and hotels are serving the choicest of menus in both vegetarian and non-vegan profiles.

• One of the unique concepts in Indian cuisines is the presence of roadside eateries. Basically, these are known as Indian Dhabas or hotels, where the concept is to rest while fresh food is cooked and served hot. In the strangest of manner, these are quite popular amongst the India natives and even the foreigners are not averse from such an influence.

Not only is Indian food varied in its taste, preparation and concept, it is the lifeline of Indian societal norms. Religious ceremonies, festivals and celebratory occasions are not complete without a course of food, and this is a testimony to the high esteem in which Indian cuisine is held throughout the country. With advanced technology, Indian microwave cooking might have been a new addition, but the basic features have not changed over the ages.

One of the best things about Indian cuisine is the adaptability to various kinds of recipes.
