Nuts are a great source of nutrition, and I love eating them in between meals at least once a day. Almonds tend to be my favorite as they are very healthy, and I simply enjoy their flavor. There are many types of nuts such as chestnuts, cashew, candlenut, brazilnut, butternut, beech, dotorimuk etc. My parents eat a lot of organic cashews as they have been proven to fight depression and stimulate the happy parts of our brain. It might be counter intuitive, but soaking your seeds and nuts activates their enzymes, making them a much healthier food source. When reacting with water, they activate their enzymes, eliminate enzyme inhibitors, and tend to digest the protein, therefore increasing in nutritional and hydrating potential making all the great stuff they contain readily available to the body. Keeping seeds such as flax, or hemp in water also makes them easier to chew, and therefore to digest. The procedure is quite simple. First the nuts should be placed in a container, and covered with one to two inches of water above where they are laying. They should be then placed in the refrigerator for up to two hours or, for almonds, overnight. Since those are my favorite, I do have to wait a bit longer for them. After the stated period the nuts or seeds will plum up, absorbing small amounts of moisture and oxygen in the water. Afterward they will be ready to eat and enjoy. If keeping them for longer periods of time, do rinse them off and change the water each day. It is important to keep them totally submerged, as otherwise they might get bad quicker.
