Spices and herbs should be stored in a dark and cool area. They will not taste as fresh if they are exposed to light or warmth. In terms of lasting, remember it is the flavor of the spices that is usually the issue with the older spices losing their flavor. The color, fragrance and condition of the spice will often indicate its freshness. You must store them correctly in order to maintain their freshness. Your objective is to cook them past the point of being pale blonde, to the point where they become a golden caramel color. This golden color means that the sugar has caramelized, leaving a sweet flavor.

To make slicing meat into thin strips a little easier, partially freeze it. This technique is especially useful for the meat slicing styles typically used in Asian cuisine. When the meat is partially frozen, cutting becomes cleaner as the meat fibers are less likely to tear or stretch. After slicing the meat, allow it to completely thaw to ensure that it cooks evenly.

As you are seasoning your meats, you should make a little piece first before you cook the entire piece. Burgers, meatloaf and meatballs require proper seasoning to taste their best. After you season the meat, do not cook all of the batch. Try making a little patty and cooking it first. Once you like the way this piece comes out, you can cook the rest.

Cook your vegetables quickly to retain quality and nutrients. If you slow cook vegetables they will lose nutritional value and taste. As an added benefit, these techniques tend to produce healthier vegetables in general. Cooking vegetables for only a short amount of time is essential.

A lot of preparatory work can be done ahead of time in order to speed up time spent cooking. Try looking at recipes and see what can be done in advance without spoiling. You can prepare a lot of food the day prior to actually cooking. This makes preparing even more complex recipes fun and fast.

If you want to eat well and lose weight, it's a good idea to decrease the amount of oil you use in cooking. Butter and oils are often unnecessary fats. Instead, opt for nonstick cooking spray.
