You should store all herbs and spices in cool, dark places. If they get exposed to any light, humidity or heat, their flavor will begin to weaken. Keep spices fresh for the longest time possible by storing them correctly.

Prepare to cook before you actually start cooking. Try to have the prep work completed before cooking; this is important. Cooking can get stressful when you're working to deadline. Try drying your own tomatoes. Prepare by cutting ripe tomatoes into half-inch-thick slices or slicing Roma tomatoes in half down their long axis. Set them on a rack cut side up and sprinkle lightly with salt. Put a cookie sheet underneath the cooling rack and then set the pair in an oven heated to 190 degrees. Leave for as many as ten hours. Store in plastic bags in the freezer. Alternatively, dried tomatoes can be packed in a jar filled with olive oil and fresh herbs. Refrigerate and use within 2 weeks.
