How to Take Advantage of the Used Oil to Cook Dishes

When we fry foods, we are often troubled by the remained used oil. If we throw it away, it is too wasteful; but if we use the oil to cook meals, we will be afraid of the safety of foods. The biggest problem of remained oil is to avoid the second high temperature cooking and avoid the further thermal oxidation polymerization. If we could control this principle, it will not be difficult to take use of the oil to cook healthy dishes.

Method one: It can be used for seasoning. People often like to add a little onion sesame oil, garlic oil, pepper oil or chili oil to make cold dishes or noodles. So, they can add the various seasonings into oil when the food frying is near the end to make delicious seasoning oil. Then store the oil in jars or glasses bottles to seal them. These seasonings have certain functions of anti-oxidants, so the storage time of oil can be delayed to half month.

Method two: You can use it to make desserts. It is necessary to add some oil in cooking cake, biscuits, pasta and so on. At this time, you can use the filtered remained oil. Because the inner temperature in cooking does not exceed 100 degrees, the oil will not have significant oxidation with the protection of starch.

Method three: It is also suitable to make soup. When people cook vegetable salad, they have to boil the vegetables in water for about one minute. You can add one spoon of oil in the boiled water so that the vegetables will have fresh colors and good taste. It will be all right to add remained oil in boiled water because it will not produce smoke.

Method four: If people have to use oil to cook dishes, they can add the remained oil later. People are suggested to use fresh oil first with only a half amount. When they put the vegetables into pot, they can use the remained oil with only a half amount. This method could avoid the smoke cause by the second high temperature frying of used oil, and it will also not affect the quality of dishes.
