With summer around the corner we will soon be entering the season for barbeque food. The UK weather may be unpredictable and sometimes wild but this does not stop a keen barbeque-lover who will even huddle under the shelter of a flimsy gazebo in the pouring rain whilst preparing food. There are countless recipes for meat-based barbeque food but many people get stuck for ideas when it comes to vegetarian barbeque food. Here are a few suggestions that can make a great addition to any barbeque or a tasty vegetarian option for friends and family. Vegetable kebabs – skewer mushrooms, peppers, courgette, cherry tomatoes and halloumi cheese before marinating in a sweet chilli sauce and cooking on the barbeque. These make a really tasty alternative to meat kebabs and are suitable for vegans too if you leave out the cheese. Corn on the cob – this requires little or no preparation. Simply pop them on a hot barbeque and wait until they are slightly charred. Cover in butter before serving for a really tasty snack or side dish. Halloumi cheese – this Greek cheese is best served grilled and therefore makes a perfect addition to any barbeque. You can either serve as a side dish or add this delicious salty cheese to your burger. Bananas and chocolate – this is a great desert that can easily be cooked on the barbeque. Simply place a banana over the heat while it is still in its skin. After a few minutes slice open one side and stuff with small squares of chocolate before returning to the heat until it is soft and melted. Lentil burgers and sausages – there are lots of ready-made vegetarian burgers and sausages you can choose from in your local supermarket but if you have time it is fun to make your own. You will find numerous recipes online and it is also possible to experiment with your own ingredients. Generally it is a good idea to use lentils or beans with breadcrumbs and an egg to bind everything. The rest is up to you. Some supermarkets also stock a sausage mix to which you can add water and any other ingredients you fancy such as apple and mushrooms. Sweet potato – again this is really easy to prepare. Simply peel and cut the potato into slices before coating with a little oil and cooking on the barbeque. Remember to compliment your barbequed food with plenty of fresh salad, bread buns and a selection of condiments. You could even make your own salsa or sweet chilli sauce.
