Au comptoir de Brice, à Paris.

La promesse de l'été, c'est l'espoir d'un déjeuner sur l'herbe, une bouteille de rosé rafraîchie au fil de la rivière tandis que les brochettes d'agneau prennent couleur sur les braises. Des rosés, il en est de toutes les couleurs et de toutes les régions, certains anonymes, d'autres racés, comme celui du domaine de Saint-Ser, assemblage de cépages, grenache, cinsault, syrah, élevé sur des terres immortalisées par Cézanne, au flanc de la montagne Sainte-Victoire.

Phénomène récent, les cuisiniers de bistrot sont désormais attentifs aux accords de leur cuisine avec les vins. De plus en plus, ils les dégustent avant de les mettre à la carte. Ainsi au Comptoir de Brice, au cœur du marché Saint-Martin, à Paris, Brice Morvent associe volontiers son travers de porc mariné au paprika et sauce barbecue maison avec la cuvée Talon Aiguille, 100 % carignan, que Yann Bouler bichonne au domaine de l'Ancienne Cordonnerie à Boujan-sur-Libron (Hérault).

SOUPE FROIDE DE TOMATE

C'est en outre une bonne étape avant l'Auberge du Vieux Puits de Gilles Goujon à Fontjoncouse (Aude), qui est aussi sur la route de Compostelle ! Voici une autre table pour l'été avec entrée inratable : la salade de poivrons rôtis aux câpres et anchois du restaurant Yard. Ce plat délicieux fera bon ménage avec Pomponette, un rosé rafraîchissant du domaine de Sulauze-Lefèvre (Coteaux d'Aix). Au restaurant Habemus, dans le quartier de l'Opéra à Paris, on peut demander au chef Arnaud Morel la composition d'une sauce acidulée aux herbes qui accompagne son croustillant de crevettes. Sa terrine de lapin à l'estragon – herbe aromatique longtemps négligée – est aussi propice à la dégustation d'un sancerre blanc 2008 de Sébastien Riffault délicieusement mûr en dépit des rigueurs du millésime.

Carte bucolique aussi chez Marie et Louise, près du canal Saint-Martin, où une soupe froide de tomate au basilic et un cabillaud vapeur sauce aïoli font un joli bout de chemin avec une dizaine de rosés bien choisis, parmi lesquels la cuvée Solane 2011 du mas Juliette (Coteaux du Verdon). Ces différents vignerons, proches de la nature, sont animés par la passion de leur terroir et quelques convictions fortes.
