Here’s a wonderful roasted pepper spread canning recipe to help you get started. For this recipe, you will need red peppers, tomatoes, garlic and onions. To flavor this spread you will need sugar, salt and vinegar. Try to source fresh ingredients from farmers’ markets and even from your own garden. Canning jars and other canning supplies such as a boiling water canner and jam tongs are essential for this delicious recipe. Start by roasting the peppers, tomatoes, garlic and onions on a grill. Let the veggies roast on all sides till the tomatoes and peppers soften and blister while the garlic and onions blacken. The grilled veggies have to be cooled to room temperature before you can work on them further. After they cool, peel and finely chop the garlic and onion. Peel and deseed the tomatoes and peppers. Blend the tomatoes and peppers to a smooth paste in a food processor. After you are done with the food, it’s time to prep the canning supplies. Heat the boiling water canner and let the canning jars and lids simmer in the water till they are ready to use. The jars don’t need to be boiled, just let them simmer. Mix the pepper and tomato puree with the chopped onion and garlic. Add in sugar, salt and red wine vinegar to spice the spread. Bring this mixture to boil in a large saucepan for about 20 minutes. Ladle this mixture into the sterilized and dried canning jars leaving about half an inch of space on the top. Secure the jars with airtight lids and clamps. Let the jars boil in the canner for about 10 minutes and remove them from heat with the help of the tongs. The lids should be secured tightly so the spread doesn’t spoil.
