Chantry Knife Sharpeners Made in Sheffield, England, UK, Taylors Eye Witness Chantry knife sharpeners replicate the action of a butcher's steel for sharpening knives. A pair of spring loaded, mini sharpening steels rotate under tension as the blade is pulled through. The sharpening steels are mounted at a pre-set angle, ensuring the correct edge angle. Several models share the same internal mechanism, Chantry Classic; Chantry Modern; Chantry Retro; Sheffield Choice Plus Sharpener. The entire internal mechanism may be replaced in all except the Shefield Choice Plus Sharpener. Replacement mini sharpening steel rods are also available separately. The 'Retro' has the original 1940's style casing. Designed in the 1970's, the 'Classic' is on permanent display in the New York Museum of Modern Art. The latest incarnation, the 'Modern' was designed by Sam Hecht and won the 2005 design Plus Award. Suitable for plain or serrated edge knives, the effectiveness of the Chantry Sharpener has been proven over time. Compared to a ceramic sharpener, the cutting edge produced by the Chantry is slightly more toothy, consisting of micro serrations.
