Stainless Steel cookware – Steel cookware has been used in India for ages in all homes and with good reason. It’s easy to cook in, is durable and lasts for many years, it is also easy to clean and maintain and the best part is that steel doesn’t react with most foods. However, with the advent of ovens and microwaves now used extensively for cooking, the steel utensils are now replaced with microwave safe containers as steel cannot be used in either ovens or microwaves. However, remember that pure steel is a bad conductor of heat and therefore all your stainless steel cookware have a layer of aluminium or cupper at the bottom to assure even heat distribution. Cast Iron Cookware – Used extensively in India, cast iron utensils are perfect when you want to cook at a low temperature. The metal heats slowly and evenly and retains heat for longer. However, it is prone to rusting and requires maintenance, though if you can find cookware with an enamel coating that would be a perfect solution. Aluminium Cookware – It isn’t uncommon to see large aluminium pots and pans in India because this metal conducts heat well, is very lightweight and hence easier to handle as compared to copper or cast iron and is cheaper as well. However, it is prone to discolouration and warping easily and cannot be put in to dishwashers. Non stick cookware – Today most homes have nonstick cookware sets with pans, girdles, skillets and even kadais. These are the healthiest of cookware choices, as it limits the use of oil because the non stick coating inside these prevents the food from sticking to the base of the pan. If you are using non stick cookware, remember to use only wooden or non-stick plastic ladles and spoons or you can scratch the non-stick coating. Some pans have a double coating while others can have up to 7 layers and are longer lasting. Induction cookware – These induction cookware set are especially designed for induction cooktops and while some are basically non-stick pans with an induction plate underneath others can even be ceramic cookware and glass cookware that is designed to be perfect for an induction stove. Microwave cookware and Oven cookware – Today microwave cooking is very common in busy homes and that is why you can find a large variety in microwave cookware. You can easily find plastic microwave cookware set that have a combination of 3 to 5 containers, each with a perforated lid that makes it easy to cook in the microwave and has great designs so that the food can be served in the container itself. However, you will find glass, ceramic and even bone china containers that qualify as both microwave cookware and oven cookware. For baking, aluminium baking dishes in many styles and sizes are popular, though glass and ceramic are also extensively used for baking.
