Eid marks the end of Ramzan, the month of fasting and abstinence. It is also synonymous with breaking bread with the family and savouring traditional cuisine. If Eid in India translates as sinfully sweet sevaiyan or sheer kurma, badaam phirni, aromatic gosht biryani, haleem, shami kebabs, mutton korma, pasanda and zafrani murgh, then see what’s cooking across the globe this Eid… Pakistani tables are laden with shami kebabs, lamb chops, kabuli pulao, kimme wali tikki, badami murgh and of course the traditional sevaiyan dusted with slivered almonds, quite akin to Eid cuisine in India. The Bangladeshi version of sevaiyan is called shemai and traditionally served on Eid. In Afghanistan the tables heave with murghe kabob served with shor nakhod (a lemony chickpea salad), semyan and cake wa kolcha (akin to our very own naan khatais). The Egyptians celebrate Eid with the traditional Kahk or cookies filled with nuts and dusted with powdered sugar. In Tunisia, Lebanon and Turkey Eid is celebrated with Baklava or pastry sandwiched with pistachios and cinnamon, drizzled with honey. Moroccans celebrate Eid with traditional fare. Sweet rolls called Krachel, made from orange flower water, sesame seeds, flour and anise while Msemen are square pancakes eaten with honey and melted butter. Mechoie is the traditional spit-roasted leg of lamb while Seffa Medfouna which is saffron infused chicken or lamb covered with couscous and broken vermicelli. Across Indonesia, Brunei and Malaysia the Eid specialties gracing the table include: Opor Ayam (chicken in coconut milk), Ketupat or rice wrapped in a palm leaf pouch and boiled, making dumplings which are traditionally eaten with Rendang. The spicy beef / chicken / mutton curry simmered in coconut milk and spices, called Rendang is made on festive occasions like Eid. Lemang is a glutinous rice cake steamed in hollow bamboos, served for Eid. The sweet finale is dodol, a sticky, toffee like sweet made from rice flour, jaggery and coconut milk.
