Spices were highly priced in the Middle Ages because food got spoiled so quickly due to poor hygiene standards and appalling food preservation methods. Different processes and different dishes use different forms of the spices for the different products they make. The numerous restaurants, stores and fast food joints are some of the largest clienteles to the markets of spices in UAE. The domestic sector or the countless households of UAE are also large consumers of the spices available in UAE and the use of spice is not just restricted to the commercial set ups of UAE. Mostly the companies in the spices commerces make and sell the spices in the dried form. They usually deal exclusively with whole dried spices owing to the fact that it offers the longest shelf life. The consumers these establishments deal with also purchase the whole dried spices in large amounts and store them for use whenever necessary. The products from the establishments dealing with spices in UAE are usually quite cheap and are used on a per-serving basis. Many of them even deal with spices that are rarely available. They do it by either acquiring fresh or whole sale by means of import or by growing the products themselves. Turmeric is one such spice that is quite rare amongst the establishments dealing with spices in UAE. Because of this, most of the companies that deal with the many products of spices offer turmeric only in the ground form to their customers A large number of products offered by the establishments involved in the spices trades of UAE are those that are created from small seeds. Fennel and mustard seeds are some of the most commonly used products that fall under this category. These products are made available in both the whole form and in the powder form to its clienteles The storage of the products of spices in UAE is given great importance by the establishments in the businesses Most establishments store the spices in the whole form and grind them up only upon the requests of the patrons owing to the fact that the products of spices in and condiments UAE lose their flavour quite soon in this form.
