Smoking food process is slightly different from grilling. Smoking is done in a closed container whereas grilling is done in the open container. You can even try on soaking wood chips in wine, beer or apple cider. You are free to make your choice. 3. Drain the wet chips and put them on top of the dry ones inside the smoker box. Put the smoker in a corner then put the smoker box directly over the heat source but should be half off. 4. Pre-heat all burners with high setting. The time smoker chips start to burn, about 5 to 10 minutes and after that turn all the burners except the one burner where the smoker box is near it. Turn on this burner to medium or low setting.
