Pinwheels with a Crunchy Twist Looking for a party snack food that is quick and healthy? Look no further than this delicious recipe for Feta Cheese Pinwheels. They take about 10 minutes to prepare, 25 minutes to bake and less than 5 minutes to eat!  Ingredients:
1 puff pastry (thawed)
1/4 cup Feta Cheese
1/4 cup Sun dried Tomatoes
1/4 cup crushed Asiago and Cheddar CheeseCrisps
Pinch of Salt
Directions: - Pre-heat the oven to 400 degrees
- After the Puff Pastry has been thawed, roll it out on a floured surface until it is thin and smooth
- Spread the Feta Cheese, Sun dried tomatoes and CheeseCrips in an even layer over the pastry
- Add a pinch of salt for flavoring
- Begin at the edge of the dough and roll it into one long loaf and with a sharp knife, cut the dough into small pinwheels
- Place the pinwheels on a greased pan face up
- Bake for 20-25 minutes in the oven! Serve Hot
This recipe makes about 12 pinwheels, so if you are planning on having a larger event increase the recipe to accompany the amount of guests. Ingredients:
1 cup frozen corn
2 large carrots, peeled and sliced
1/4 cup Onion
2 Tbs. Olive Oil
2 Cups Vegetable or Chicken broth
1 cup water
2 cans Butter Beans
1/2 can diced roasted tomatoes
1 tsp. Basil or Oregano
1 bag Cheddar and Asiago Cheese Crips for dipping
Directions: - In a large pot, sauté corn, carrots, and onion in olive oil until vegetables are soft
- Slowly add broth and water
- Add remaining ingredients and bring to a boil
- Reduce heat and simmer for 20 to 25 minutes
- Serve in individual bowls with delicious Cheese Crisps for dipping
The temperatures outside may be dropping, but this easy appetizer is sure to warm even the coldest of guests!
